Can someone please remind me I can make these latkes all year round! So satisfying and I love adding a big dollop of sour cream and apple sauce to the top- yum, yum, yum!
Potato Latkes
Prep time: 10 minutes
Cook time: 35 minutes
Total time: 45 minutes
Yield: 25 to 30 latkes
Ingredients:
4 to 5 russet or Idaho potatoes, grated and patted dry (remove excess liquid)
2 yellow onions, grated
2 eggs, lightly beaten
4 tablespoons all-purpose flour
1 tablespoon salt
2 teaspoons ground black pepper
2 teaspoons garlic powder
Canola or Vegetable Oil, for frying
Applesauce, to garnish
Sour Cream, to garnish
Directions:
In a bowl, combine grated potatoes, grated onions, eggs, flour, salt, pepper, and garlic powder, mix together until fully combined.
In a non-stick skillet, add in about 2 tablespoons of canola oil. Once the oil is hot enough, scoop about 1/4 cup of latke mixture into the pan, using a spatula flatten latkes out until desired thickness is reached, cook on both sides for about 3 minutes, until golden brown and crispy. Continue with the rest of the latke mixture until all latke's are cooked. Serve alongside apple sauce and sour cream.
