This soup is perfect for when it's cold outside or you have a cold or you just have too many darn veggies in your fridge and you just want to clean them out. Make this recipe and all your cold dreams will come true or no wait, all your hot dreams will come true!
Clean Out All the Veggies in Your Fridge Soup
Prep time: 5 minutes
Cook time: 35 minutes
Total time: 40 minutes
Yield: 4 to 6 servings
Ingredients:
1 tablespoon butter
1 onion, minced
2 garlic cloves, minced
2 carrots, peeled and roughly chopped
1 yellow pepper, diced (or any color pepper)
1 head broccoli, chopped into florets
1 can garbanzo beans (substitute: Cannelinni beans, Black beans, or Kidney beans)
2 cups spinach
1 box (quart) vegetable broth
Salt and pepper, to taste
Directions:
In a medium pot, melt butter over medium-high heat. Sauté onions until translucent, about 4 minutes. Add in garlic, cook for 2 minutes. Add in carrots and yellow pepper, cook for 5 minutes. Add in broccoli, beans, spinach, and broth, stir all together, cook on medium-low for 20-25 minutes, until all vegetables are tender. Season with salt and pepper, to taste.
*Cook's note: I sometimes throw in some leftover rice or a cup of small pasta too add a little oomph too!
