Veggie Monster Soup

Yield: 4 to 6 servings
Ingredients:
2 tablespoons butter
1 small yellow onion, diced
2 garlic cloves, minced or pressed
2 carrots, peeled and diced
2 celery stems, diced
1 parsnip, peeled and diced
1 red pepper, diced
1 broccoli head, cut into florets
2 plum tomatoes, deseeded and diced
1 (15.5 ounce) can black beans, drained
1 (8 ounce) can tomato sauce
4 cups vegetable broth (*substitute: Chicken broth)
Salt and pepper, to taste
Shredded cheddar, to garnish
Directions:
In a large saucepan, melt butter. Add in onion and cook until translucent, about 3 minutes. Add in garlic and cook for 1 minute. Add in carrots, celery, parsnip, and pepper, cook until tender, stirring often, about 6 to 8 minutes. Add in broccoli, tomatoes, black beans, and tomato sauce, stir to combine with vegetables. Pour in vegetable broth and bring to a boil. Lower to a simmer and cook covered for 20 minutes. Season with salt and pepper, to taste. Sprinkle each bowl of soup with some cheddar cheese.
