Corey loves cheeseburgers and he loves mac n cheese, but then again who doesn't? This recipe combines my love's favorite flavors and he doesn't have to settle or choose between the two, he can have them both at the same darn time!
Perfect to bring to a pot-luck dinner or a backyard BBQ, easy to whip up and extra cheesy! Just add in whatever you usually top your burger with- the sky is the limit! With Summer right around the corner, you'll want to keep this recipe in your back pocket!
Cheeseburger Mac n Cheese

Cook Time: 35 minutes
Total Time: 40 minutes
Ingredients:
1 (16-ounce) box elbow macaroni
1 pound ground beef
1/4 cup onions, diced
1/4 cup ketchup
1 tablespoon mustard
1/4 cup pickles, chopped (optional)
1 tablespoon butter
1 tablespoon flour
1 (15- ounce) can evaporated milk
1/3 cup Velveeta cheese
2 cups cheddar, plus 1 cup to top with
1/4 cup breadcrumbs
Salt and pepper, to taste
Directions:
Preheat oven to 400 degrees F.
In a pot, bring salted water to a boil. Add in macaroni and cook according to the package directions or until al dente. Set aside.
In a medium skillet, add meat, onions, ketchup, and pickles over medium-high heat and cook until meat is browned, about 8 minutes. Set aside.
In a saucepan, melt butter and flour together over medium-high heat, whisking constantly until thickened, about 1 minute. Slowly add in evaporate milk, whisking often until thickened, about 5 minutes. Add in Velveeta and cheddar cheese until melted. Add in cooked macaroni and mix until fully combined with the cheese sauce.
In a 9-by-13 baking dish or 3-quart dish, add in half the macaroni in a single layer. Continue with the meat layer and top with the other half of the macaroni. Sprinkle the top with the additional cup of cheddar and breadcrumbs.
Bake in preheated oven for 15 to 20 minutes until cheese is bubbling and melted. Serve hot.
