What's better than Vodka sauce? Homemade Vodka sauce! Treat yourself to this delicious sauce and serve it on top of everything! Well, basically everything!
In a medium saucepan over medium heat, melt the butter. Add the shallots and cook until lightly browned, about 4 minutes. Stir in the garlic and tomato paste, cook until fragrant, about 2 minutes.
Remove from heat and stir in the vodka and tomatoes. Return the saucepan to medium heat and simmer, until the alcohol cooks off, about 8 minutes.
Transfer sauce to a blender and puree until smooth. Pour back into saucepan. (If you like your sauce chunky, you can skip this step).
Return the saucepan to medium heat and add in heavy cream, until warmed through and slightly thickened, about 3 minutes. Stir in the parmesan. Season with salt and pepper, to taste.
Vodka Sauce
Yields: About 2 cups
Ingredients:
2 tablespoons butter
1/3 cup shallot, minced
2 cloves garlic
1 tablespoon tomato paste
1 teaspoon sugar
1 28-ounce can whole peeled tomatoes, crushed by hand
1/2 cup Vodka
2/3 cup heavy cream
1/3 cup Parmesan Cheese
salt and pepper, to taste
