Holidays are a real treat. Lots of family time, lots of memories made, and at times lots of calories earned. I'm one to go big during the holidays, make a lap or two around the platters of food and eat until I really can't stuff my face anymore, but yet still continue to eat, even though I know I'm going to need to be rolled out the door. Have no fear, this sweet potato casserole topped with golden marshmallows will leave you feeling satisfied and it's healthier for you or as I like to say, I've "health-ed" it up ! Adios sugar, hello crushed pineapple! The pineapple adds not only nutrients, but the perfect amount of sweetness to take this casserole to another level. Finish it off with a layer of marshmallows and have yourself a Happy Thanksgiving!
Let's get cooking! Preheat your oven to 325°F degrees. Then get all your ingredients together and measure them out!
In a large bowl, mash up yams until smooth and clump-free, using a potato masher or a hand mixer. Add in crushed pineapple, vanilla butternut extract, and melted butter, mix to fully combine. Pour mashed yams into a 4-6 quart or 2.5 litter-baking dish. Top with marshmallows.
Bake in preheated 325°F degree oven, until marshmallows are golden brown, about 20-25 minutes. Serve hot... and next to your spatchcocked turkey with homemade gravy!

2 (29-ounce) cans Yams, drained, (recommend Bruce’s Canned Yams)
1 (8-ounce) can crushed pineapple, drained
2 teaspoons vanilla butternut extract
2 tablespoons butter, melted
1 (10oz) bag marshmallows, to top with
Directions:
Preheat oven to 325°F degrees.
