This Chinese coleslaw is a unique staple family recipe served in our house most holidays. A clean and delicious recipe filled with crunchy ramen noodles, toasted peanuts and almonds, with a light unique asian inspired dressing. Bet you've never heard or tried of this salad before? Chinese Coleslaw

Yield: 10-12 servings
Ingredients:
1 cup silvered almonds, lightly toasted
¼ cup sesame seeds, lightly toasted
2 (14-ounce) bags classic coleslaw (about 9 cups) (substitute- shredded cabbage)
6 scallions, finely chopped
1 ½ cups honey roasted peanuts
4 packages Oriental flavor Ramen soup mix (substitute- original flavor)
1 cup white vinegar
½ cup sugar
1 1/3 cup vegetable oil
Directions:
Preheat oven to 350°F degrees. On a baking sheet with parchment paper or aluminum foil, toast almonds until lightly golden brown, about 3-4 minutes. Set aside. On the same baking sheet, toast sesame seeds, until lightly golden brown, about 2-3 minutes. Set aside.
Using a mallet or back of a spoon, crumble up noodles (from soup mix) into small pieces. Set aside.
In a large bowl, mix together toasted almonds, toasted sesame seeds, shredded coleslaw, scallions, peanuts, and crushed noodles. Set aside.
In a small bowl, whisk together oriental flavor ramen soup powder mix, vinegar, and sugar. Slowly whisk in vegetable oil until emulsified. Pour dressing over salad and mix together until fully dressed.
