My family has come to the conclusion that no one makes better mashed potatoes than Kika, our "third grandma" who cared for us while we were growing up. She is a talented self-taught cook with many staple recipes, but her mashed potatoes made a lasting impression on us all. Her mashed potatoes were the silkiest, sexiest (for a lack of better word), milkiest- hit the spot type of good, perfect to pair along with corned beef, turkey, brisket- anything really! Here is my attempt at recreating Kika's mashed potatoes and think it's pretty darn close to the real deal. Grab a spoon and dig in!
Kika's Mashed Potatoes
Prep time: 7 minutes
Cook Time: 25 minutes
Total Time: 32 minutes
Yield: 6 to 8 servings
Ingredients:
7 to 8 yukon gold potatoes (about 4 ½ lbs), peeled and chopped into chunks
1 oz cream cheese
1 stick butter
1 ½ cups milk
Salt and Pepper, to taste
Directions:
In a medium to large pot, bring water to a boil. Add peeled and chopped potatoes. Cook until fork tender, about 20 to 25 minutes. Drain and place back into pot, then mash until smooth. Add cream cheese, butter, and milk; stir till fully combined. Season with salt and pepper to taste, don’t be afraid to season, you have a lot of potatoes!
